Chia Pudding

Chia Pudding recipe is an easy dessert/snack to make and has substantial amounts of protein!

Ingredients

  • 2 cups unsweetened almond milk (carrageenan free)
  • 1/2 cup chia seeds
  • 1/2 teaspoon vanilla extract and/or tablespoon of rose water
  • 1 teaspoon of cinnamon
  • 1-2 tablespoons pure maple syrup or raw honey or xylitol
  • Fresh berries for topping (blueberries, strawberries) or almonds or other chopped nuts

Preparation

Combine almond milk, chia seeds, vanilla/rose water, cinnamon and sweetener in a bowl. Mix well until combined and the mixture begins to thicken. Store covered in the refrigerator overnight or for at least an hour. Use a ball jar for perfect storage and serving.

If the pudding is too thick, add a little water and top with fruit or nut of your choice. Eat it for breakfast, as a snack or serve as dessert!
