Mint-Chip Superfood Smoothie Recipe
Even though school is back in action, it doesn’t mean that the warm weather has said goodbye! We’ve found a way to make summer last a little bit longer with this mint-chip superfood smoothie idea that will trick you into thinking that you’re slurping on an ice-cream shake. The best part about this recipe is that it’s free of gluten, dairy, and refined sugars, and chock-full of antioxidants, vitamins, minerals and fiber. Feel free to add your favorite protein powder or collagen to the mix for added benefits.
Ingredients:
- 2 cups unsweetened almond milk or coconut milk
- 1 cup of spinach, kale, chard or leafy green
- 2 tablespoons mint leaves
- 1 tsp vanilla extract
- 1 frozen banana
- 2 tablespoons cacao nibs or unsweetened chocolate chips
- ½ cup ice
- Maple syrup or dates to taste for added sweetness
Directions:
Throw all ingredients into blender on high for 30-60 seconds until smooth. We find that it blends better when you first blend together the greens and liquid, and then add the rest of the ingredients. Enjoy!
